2 Ghee 1/3 cup and 1 tbsp
3 asafoetida 1/2 tsp
4 cumin seeds  1 tbsp
5 cinnamon 1 and 1/2
6 black pepper  3/4 tsp
7 Black cardamom 4
8 Red chilli 3 and 1/4 
9 Ginger Paste 1 tbsp
10 coriander powder  1 tbsp
11 hang curd 1/2 cup
12 saffron 2 pinches
13 Salt As Needed
14 Red chili powder  3/4 tsp
15 water 1-2 cup
16 fennel seed powder 1/4 tsp
17 milk 1tbsp
18 all-purpose flour 1 tbsp
19 For garnishing cilantro sprouts 1-2 


Process :


  1. First prepare milk by soaking saffron in milk. After this, heat a pressure cooker and ghee in it. When the ghee is hot enough, add the whole spices and fry for a few seconds.
  2. Then, add whole red chillies, cumin seeds and asafoetida in the pressure cooker and saute for a few seconds. Later, add the mutton pieces to it and stir well. Cover with the lid but do not close it and cook the mutton on medium flame for 5-6 minutes.
  3. You will see that the color of the flesh will turn light brown. After 5 minutes, remove the lid and add 1/2 cup of water and stir well along with the spices.
  4. This will help the mutton to soak up the flavor of all the spices. Then reduce the flame to low and cook the mutton for 10-15 minutes.
  5. Mix yogurt with saffron milk and other spices. Meanwhile, take a small bowl and mix all purpose flour with curd in it well. Add saffron milk (Step 1), salt, fennel powder, coriander powder, Kashmiri red chili powder and dry ginger powder to this curd mixture.
  6. Mix all the spices well in the curd. Once done, put it in the pressure cooker. Well use a ladle and cook the mutton in curd for at least a minute.
  7.  Pour this curd mixture into the pressure cooker and slow cook the mutton for 1-2 hours.
  8. Then put 1 cup of water in the pressure cooker and cook the mutton for 1-2 hours. Stir in the middle so that it doesn't stick to the bottom.
  9. You can also pressure cook the mutton for 5-6 whistles. Once done, garnish with chapati or naan and serve.
  10. You can eat this dish with rice also.

Tips 

  • For those who prefer a thicker gravy, add 2 tbsp of flour to the curd and whisk it well before adding it to the gravy. This will also enhance the taste of the dish.
  • Rogan josh is made in a pan on low heat but you can cook it in a pressure cooker to speed up the process.
  • The distinctive red color of rogan josh can be obtained from Kashmiri red chillies and ratan josh. It is an herb in the borage family, traditionally used in Indian cuisine.
