Ingredients
- balsamic vinegar 1 cup
- Prawns (medium) 6-8
- Castor sugar tsp
- a pinch of sea salt
- salt to taste
- Garlic finely chopped 1 tsp
- Mustard paste tsp
- Black pepper powder 1 tsp
- Red chili flakes 2 tbsp
- Oil 3-4 tbsp
- Cherry Tomatoes 6-8
- iceberg lettuce leaves 2-3
Method
- Shell and Devin keep the shrimp's tail intact. rinse well.
- In a non-stick pan, reduce the balsamic vinegar for 8-10 minutes. Add castor sugar and sea salt. Mix well and boil for 5-8 minutes Or until it thickens.
- Take out the prawns in a bowl. salt, chopped garlic, mustard paste, tsp black pepper powder, 2 tsp balsamic reduction, 1 tsp red chilli flakes, 1 tbsp oil and mix well. Keep aside to marinate for 10-15 minutes.
- Combine quartered cherry tomatoes and torn lettuce leaves in a bowl.
- Heat 1 tbsp of oil in a non-stick grill pan, place the prawns and fry for 2-3 minutes on each side.
- Add salt, remaining pepper and chili flakes and remaining oil to lettuce-tomato mixture. Transfer to a serving plate. arrange for
