Ingredients 

  • balsamic vinegar 1 cup
  • Prawns (medium) 6-8
  • Castor sugar tsp
  • a pinch of sea salt
  • salt to taste
  • Garlic finely chopped 1 tsp
  • Mustard paste tsp
  • Black pepper powder 1 tsp
  • Red chili flakes 2 tbsp
  • Oil 3-4 tbsp
  • Cherry Tomatoes 6-8
  • iceberg lettuce leaves 2-3

Method

  1. Shell and Devin keep the shrimp's tail intact. rinse well.
  2. In a non-stick pan, reduce the balsamic vinegar for 8-10 minutes. Add castor sugar and sea salt. Mix well and boil for 5-8 minutes Or until it thickens.
  3. Take out the prawns in a bowl. salt, chopped garlic, mustard paste, tsp black pepper powder, 2 tsp balsamic reduction, 1 tsp red chilli flakes, 1 tbsp oil and mix well. Keep aside to marinate for 10-15 minutes.
  4. Combine quartered cherry tomatoes and torn lettuce leaves in a bowl.
  5. Heat 1 tbsp of oil in a non-stick grill pan, place the prawns and fry for 2-3 minutes on each side.
  6. Add salt, remaining pepper and chili flakes and remaining oil to lettuce-tomato mixture. Transfer to a serving plate. arrange for
  7. Drizzle with grilled prawns and balsamic reduction.
