Asian Stir Fried Vegetables

Plate of Asian stir fried vegetables cooked in a hot pan, especially in Asian style. You can still use a frying pan on your home stove.

 This recipe is so simple, quick to make and makes a great side dish for any Asian meal. If you are going non-vegetarian, you can easily make it your complete meal with a serving of rice. There is a lot of nutrition and it is a well balanced healthy food.

Ingredients :

  • 2 bok choy’s
  • 2 carrots
  • 5oz – 150g King oyster mushrooms (or other mushroom)
  • 4 garlic cloves
  • 1 whole large chili
  • 2 heads of broccoli
  • 2 tsp corn starch (Corn flour)
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 4 tbsp vegetable oil 


Method :

  1. For broccoli. Cut off the broccoli head and keep it aside. Cut the ends into small pieces. Remove any rough pieces on the stems and then peel off the skin. Cut lengthwise into strips.
  2.  For carrots. Peel and cut the carrots and cut them into wedges, cutting them at an angle and rotating the carrots a quarter between each cut.
  3. For bok choy, cut off the root end to separate the leaves, then wash thoroughly. If very dirty, put in a pot of water and wash thoroughly. Cut the leaves roughly in the middle and then cut the stems into three pieces at an angle. If small, cut it in half. Place the leaves together and cut lengthwise down the middle.
  4. Place a large pot or saucepan of water over high heat, bring to a boil. When it comes to a boil, add carrots and cook for 3-4 minutes. Then add broccoli to the carrots and cook for 2-3 minutes. Refresh under cold water and drain, set aside.
  5. Cut and chop the peppers into juliennes or thin strips. With or without seeds, keep the seeds if you prefer hotter.
  6. Peel the garlic and chop it roughly.
  7. Cut the mushrooms lengthwise, set aside.
  8. In a measuring jug or container, add a little less than half a cup of water. Add corn flour or corn starch and mix well. Add soy and oyster sauce. Add sesame oil and mix well just before using.
  9. In a skillet or large frying pan, add 4 tablespoons vegetable oil and heat gently. Add garlic and chilli, let it sweat lightly. Don't brown Add the mushrooms and fry them till they become light in colour. Add bok choy stalks and fry 30 seconds.
  10. Toss the roasted broccoli and carrots with the bok choy leaves. Fry another 30 seconds. Increase the heat to full and pour in the sauce mixture (mix well first). Still sauté the vegetables in the sauce until well coated and shiny. Serve immediately when hot.
