Ingredients

  • olive oil 2.67 tablespoons
  • bay leaf 1.33 medium sized
  • garlic 5.33 medium
  • onion 1.33 medium sized onion or 45 grams onions or ⅓ cup chopped onions
  • whole wheat flour/ all purpose flour 2.67 tablespoons
  • tomatoes 6.67 medium sized tomatoes or 500 to 520 grams tomatoes or 4 cups chopped tomatoes
  • water / vegetable stock 2.67 cups
  • cashews 13.33 large
  • crushed black pepper ( Optional) 0.67 teaspoon
  • salt As required
  • basil leaves 2.67 to 4 Chopped

Process :

  • First, chop tomatoes, onions and garlic.
  • Keep them aside.
  • Take 2 tbsp olive oil in a large saucepan or pan. Keep the flame to low or medium. Add 1 medium sized bay leaf. Fry for 2 to 3 seconds.
  • Then add chopped garlic. Saute for few seconds till their raw aroma. There is no need to brown the garlic.
  • Add chopped onion. mix well.
  • Keep stirring the onion frequently till it becomes proficient.
  • Now add 2 tbsp whole wheat flour. You can also use all purpose flour (maida).
  • Mix well and start kneading the dough on low flame for about 1 to 2 minutes or till the raw aroma of flour goes away.
  • Then add chopped tomatoes. Mix them very well.
  • Now add 2 cups of water. You can also use veg stock instead of water.
  • Add cashew nuts, crushed black peppercorns and salt as per taste. Mix very well.
  • Cover the pan with a lid and bring the soup mixture to a boil over medium-low heat.
  • Check in between when the mixture is boiling.
  • Boil till tomatoes are soft. Tomatoes should loosen their rawness and soften well. Then switch off the flame and allow the soup mixture to heat up.

How to make Cream of Tomato Soup.

  • Then pour the soup mix into a blender jar. Remove bay leaf from soup mixture. Use a good blender. You can also use an immersion blender and pour the mixture directly into the pan.
  • Blend to a smooth consistency. There should be no pieces of onion, tomato or cashew.
  • Now pour the soup mixture in the same pan.
  • Place the pan on the stove top over low-medium heat and gently heat the Homemade Cream of Tomato Soup.
  • When the soup becomes hot, switch off the flame.
  • You can also add any herb of your choice. You can use coriander leaves, parsley, oregano, sage, rosemary or any herb you prefer.
  •  Serve tomato soup hot with a sprinkling of black pepper.
