Ingredients

For the salad:

  • 1 ripe avocado, sliced

  • 2 oranges, peeled and segmented

  • ½ small head radicchio, thinly sliced

  • 1 cup frisée, torn into bite-sized pieces

  • 1 cup rocket (arugula) leaves

  • 2 tbsp dried cranberries

  • 1 tbsp toasted almonds or walnuts (optional, for crunch)

For the lemon vinaigrette:

  • 2 tbsp extra virgin olive oil

  • 1 tbsp freshly squeezed lemon juice

  • 1 tsp Dijon mustard

  • ½ tsp honey or maple syrup

  • Salt and freshly ground black pepper, to taste


Instructions

  1. Prepare the greens:
    In a large salad bowl, combine the radicchio, frisée, and rocket leaves.

  2. Add fruit & avocado:
    Gently toss in the orange segments and avocado slices.

  3. Make the vinaigrette:
    In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until emulsified.

  4. Assemble the salad:
    Drizzle the vinaigrette over the salad and toss gently to coat.

  5. Finish & serve:
    Sprinkle dried cranberries and nuts (if using) on top. Serve immediately.


Tips & Variations

  • Swap oranges for blood oranges or grapefruit for a colorful twist.

  • Add grilled halloumi or goat cheese for extra richness.

  • For a vegan version, skip the honey and use maple syrup.
