🥗 Good Vibes Salad

Ingredients
For the salad:

1 ripe avocado, sliced

2 oranges, peeled and segmented

½ small head radicchio, thinly sliced

1 cup frisée, torn into bite-sized pieces

1 cup rocket (arugula) leaves

2 tbsp dried cranberries
-
1 tbsp toasted almonds or walnuts (optional, for crunch)
For the lemon vinaigrette:

2 tbsp extra virgin olive oil

1 tbsp freshly squeezed lemon juice

1 tsp Dijon mustard
-
½ tsp honey or maple syrup

Salt and freshly ground black pepper, to taste
Instructions

Prepare the greens:
In a large salad bowl, combine the radicchio, frisée, and rocket leaves. -
Add fruit & avocado:
Gently toss in the orange segments and avocado slices. -
Make the vinaigrette:
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until emulsified. -
Assemble the salad:
Drizzle the vinaigrette over the salad and toss gently to coat. -
Finish & serve:
Sprinkle dried cranberries and nuts (if using) on top. Serve immediately.
