Minestrone Soup is a Thai soup of Italian origin that is made from vegetables, often with pasta or rice, sometimes with both. Common ingredients include beans, onions, celery, carrots, stock, croutons and tomatoes.
Ingredients :
- 50ml olive oil
- 100g carrot
- 100g zucchini
- 100g potatoes
- 100g onions
- 50g leeks
- 50g broccoli
- 50g cauliflower
- 200g Tomatoes
- 100g green peas
- 10g basil
- 2 no garlic
- Salt pepper
Method :
- Wash all the vegetables and process all the above ingredients
- Heat olive oil and add in chopped garlic. Cover with butter paper and let the vegetable cook on medium heat for five to seven minutes.
- Now add onion, leek, and 50 ml stock and cover with butter paper again
- Add zucchini and tomatoes and stew again in the same way
- Add remaining vegetable stock and add coliflowers and broccoli to a boil and simmer for five to seven minutes and check for spiciness
- Add chopped peas and chopped basil. server piping hot
