Vitamin Glee Salad

Ingredients:

  • 4 cups mixed greens (spinach, arugula, romaine, or your favorite blend)

  • 1 ripe avocado, diced

  • 1/2 English cucumber, thinly sliced or diced

  • 1/4 cup walnuts, roughly chopped

  • 1 tablespoon flax seeds

  • 1 tablespoon fresh lemon juice

  • 2 tablespoons extra virgin olive oil

  • Salt and freshly ground black pepper to taste

Instructions:

  1. In a large bowl, combine the mixed greens, diced avocado, sliced cucumber, chopped walnuts, and flax seeds.

  2. In a small bowl, whisk together the fresh lemon juice and extra virgin olive oil.

  3. Pour the dressing over the salad ingredients.

  4. Gently toss the salad until all ingredients are well coated with the dressing.

  5. Season with salt and freshly ground black pepper to taste.
