Paneer Tikka
Paneer tikka is a popular and delicious tandoori sanck where paneer (Indian cottage cheese cubes) are marinated in spicy curd, and grilled in the oven.

Process
- Cut the paneer into square shaped cubes.
- Cut the onion and capsicum into 1- to 1.5-inch squares.
Paneer Tikka Marination
- In a large bowl, take hung curd (Greek yogurt) and whisk it till it becomes smooth.
- Add ginger-garlic paste, all spice powders, carom seeds, black salt, regular salt, lemon juice and mustard oil.
- Mix very well. Taste-check and add more seasonings if necessary.
- Add vegetables and cheese to the marinade. Slowly and slowly mix them with the marinade.
- Cover the bowl and marinate in the refrigerator for at least 2 hours or more.
- After 2 hours, serve the paneer alternately on bamboo skewers. Soak or rinse bamboo skewers before spreading them.
Grilling Paneer Tikka
- Preheat the oven to 230 or 240 °C or 464 °F for 15 to 20 minutes. Use only the top heating element.
- Line a baking tray with aluminum foil or parchment paper. Arrange cheese skewers on tray. Brush some oil on the veggies and paneer cubes.
- Place the tray on the top rack. Grill the paneer tikka first at 230 or 240 °C or 464 °F for 7 to 10 minutes. Then remove the skewer and turn.
- Place back on top rack in oven and continue to grill for 3 to 5 minutes until edges of cheese are golden or slightly charred. Do not grill for a long time because then the paneer cubes become hard.
- Since the temperature varies from oven to oven, keep a check. You can increase or decrease the time as required. Total grilling time will be 15 to 20 minutes.
- Remove from oven and then place the paneer cubes on a serving plate. Sprinkle some chaat masala and lemon juice.
- Serve paneer tikka with lemon wedges with mint chutney and onion rings
